Chocolate Fudge Frosting

Ingredients:
  • 120gm good quality baking chocolate, coarsely chopped
  • 150gm unsalted butter, room temperature
  • 260gm icing sugar, sieved
  • 1 tsp vanilla extract
Method:
  1. Melt the chocolate in a heatproof bowl placed over a saucepan of simmering water. Remove from heat and let cool to room temperature
  2. In the bowl of your electric mixer or with hand mixer, beat the butter until smooth and creamy for about 1 minutes.
  3. Add the icing sugar and beat until it is light and fluffy (about 2 mins). Beat in the vanilla extract.
  4. Add the chocolate and beat at low speed until incorporate. Increase the speed to medium-high and beat until frosting is smooth and glossy (about 2-3 mins).
