ORANGE MARBLE BUTTER CAKE

This is my own version of recipe for orange butter cake. The cake turns out soft with citrusy fragrance and moist.This recipe yields one 8" either square or round cake, but I use square cake tin.

Ingredients:
  • 170gm Butter
  • 170gm Cake Flour
  • 20gm Cocoa Powder
  • 1Tbsp grated orange rind
  • 60ml Orange Juice
  • 1tsp vanilla essence
  • 3 Large Eggs
  • 1tbsp glycerin
  • 225 gm Sugar
  • 1 1/2tsp baking powder
Method:
  • Preheat oven to 180'C. Cream butter and sugar with a flat beater at low speed for about 2mins, then slowly increase to medium high speed for about 8mins. The butter should have become light and fluffy.
  • Slowly add in egg one by one, beating well after each addition. Add in vanilla essence. Add in the orange zest and combine till incorporated.
  • Mix orange juice with glycerin together.
  • Fold in flour alternately with the orange juice for about 3 batches, starting with flour and end with flour.
  • The batter should look thick and creamy. Take 1/3 portion out and mix with the cocoa powder. 
  • Add in the cocoa mixture and just give it a few turn, don't mix it completely or else you will end up with chocolate butter cake.
  • Pour onto the baking tin and smooth the surface with a spatula or scraper whichever convenient.
  • Bake for about 40mins. Remove when cook and leave to cool completely.
