Ingredients:
- 170gm Butter
- 170gm Cake Flour
- 20gm Cocoa Powder
- 1Tbsp grated orange rind
- 60ml Orange Juice
- 1tsp vanilla essence
- 3 Large Eggs
- 1tbsp glycerin
- 225 gm Sugar
- 1 1/2tsp baking powder
- Preheat oven to 180'C. Cream butter and sugar with a flat beater at low speed for about 2mins, then slowly increase to medium high speed for about 8mins. The butter should have become light and fluffy.
- Slowly add in egg one by one, beating well after each addition. Add in vanilla essence. Add in the orange zest and combine till incorporated.
- Mix orange juice with glycerin together.
- Fold in flour alternately with the orange juice for about 3 batches, starting with flour and end with flour.
- The batter should look thick and creamy. Take 1/3 portion out and mix with the cocoa powder.
- Add in the cocoa mixture and just give it a few turn, don't mix it completely or else you will end up with chocolate butter cake.
- Pour onto the baking tin and smooth the surface with a spatula or scraper whichever convenient.
- Bake for about 40mins. Remove when cook and leave to cool completely.
